India – Sunny & Ganasha – Anaerobic Natural

In 2022 we got 2 staff members competing in the Dutch Barista Championships. Skip en Stephanie Both found a coffee that suited their subject for the presentation of the DBC. Stephanie found her subject in Ayurveda and found this coffee for it. The source of Ayurveda is in in India so quickly we went to our exporter This Side Up. Our attention was taken by this Anaerobic Natural from Srirangalli.

India can often have a Tobacco-like flavour which is very light appearant in the coffee. the flavour fits perfectly in one of the 6 flavour groups the aryveda is based on. The logic revolves around the order one consume Sour, Bitter, Astringent, Salty and Sweet. The latter two, of course, in very low quantities, but gives the coffee an extra dimension.
